Step 1
Use an electric beater to beat cream, mixed spice and caster sugar in a bowl until soft peaks form. Cover and place in the fridge until serving.

Melt 1 teaspoon of butter in non-stick frying pan over high heat. Add 4 tortilla pieces and cook for 40-50 seconds each side or until golden brown. Transfer to a plate lined with paper towel. Repeat in 2 more batches.
Step 3
Heat the frying pan over medium-high heat. Add pears and remaining butter. Cook, turning occasionally, for 2-3 minutes or until pears soften slightly. Remove from the pan. Add brown sugar and water to pan and stir until sugar dissolves. Reduce heat to medium and simmer, stirring occasionally, for 8-10 minutes or until pears are golden brown.
Step 4
To assemble, place one tortilla triangle on each serving plate. Top with a dollop of cream mixture and 2 slices of pear. Repeat in another layer. Top with remaining tortilla and pear slices. Drizzle with the caramel sauce.
