Step 1
In a bowl, mix all stir fry sauce ingredients together. Set aside.
Step 2
Add oil to a large skillet or wok and heat on medium high heat. Once oil is hot, add chicken to the wok and cook for 4-5 minutes, stirring occasionally. Add in salt, ginger and garlic. Cook until most of the liquid evaporates.
Step 3
Add in all the veggies and stir fry until veggies are crisp tender.
Step 4
Mix in the stir fry sauce and combine everything for a minute or two, until everything is well coated with sauce. Add in cashews and cook for a minute or two.
Step 5
Serve immediately over rice or noodles.
