It’s pretty good. I added garlic seasoning to the chicken as well for extra flavor while cooking. I suggest chopping up the pineapple into small bits so you get the flavor with each bite. I would make this again.

So so good!!! My very picky 16 year old has declared this her favourite dish. I added an additional pepper and used 1/8 cup of soy sauce instead of 1/ 4 cup soy sauce. Absolutely perfect!

It was okay. The sauce was awesome, though; if I made it again, I would double the sauce recipe. I had a whole pineapple sitting in my fridge along with some thawed chicken and this recipe was pretty easy to make. I sliced up half of the pineapple and grilled it alongside the chicken, then juiced the other half of the pineapple for the recipe and put the leftover juice in the water to steam the rice. My suggestion would be to add more flavor- maybe season the chicken more, add chopped onions, and more garlic.

Thai Cashew Chicken Recipe

soy sauce

sweet dark soy sauce

fish sauce

brown sugar

water

garlic (peeled and minced)

Whisk all of the sauce ingredients together in a small bowl and set aside.

Heat the oil in a wok or large frying pan for 5 minutes over medium-high heat. Once the oil is hot enough to produce a sizzle when a drop of water hits it, add in all of the cashew nuts. Fry the cashews until they turn light brown, just a few minutes. Remove them from the oil with a slotted spoon and set them on a paper towel to rest.

Add the garlic, onion, and dried red chilies to the oil. Stir-fry for 3-5 minutes or until you can start to smell the spicy aroma of the chilies. Add in the chicken and continue to stir-fry until the chicken turns opaque and is cooked through (about 4-5 minutes). Return the cashews to the pan and toss to distribute around the pan.

Add the sauce to the wok and toss all of the ingredients to coat them well. Turn off the heat and add in the chopped scallions. Serve immediately with a side of jasmine rice.

Raw Cashews

Coconut Oil (or vegetable oil)

Chicken Breast, cubed

Red Onion, diced

Red Bell Pepper, sliced in short julienne

Green Bell Pepper, sliced in short julienne

Sugar Snap Peas, trimmed

Onion

Garlic,

Fresh Ginger, minced

Lime

Chicken Stock (optional, for thinning sauce)

Cornstarch Slurry (optional, for thickening sauce)

Oyster Sauce

Soy Sauce

Sweet Rice Wine

Hot Sauce, adjust to taste

In a wok or a frying pan, heat 2 tablespoons of coconut oil (or vegetable oil) over medium heat. 

When hot, add the raw cashews and a pinch of salt to the skillet. Stir continuously for about 3-5 minutes, or until the cashews turn golden brown and aromatic.

Add the cubed chicken breast to the skillet. Sauté for about 5 minutes, or until the chicken is no longer pink and has a bit of caramelization.  

Remove chicken and cashews from wok and reserve.

In the same pan, add another tablespoon of oil, and when hot add the onion and cook for a couple minutes.  

Stir in the sliced red and green bell peppers, along with the trimmed sugar snap peas. Continue to sauté for an additional 2-3 minutes, until the vegetables start to soften.  

Add the reserved chicken and cashews back to the pan. 

Add the garlic, ginger and green onion and the zest of a lime and stir in the sauce.

Stir to coat everything evenly. If the sauce is too thick, you can thin it with 1/4 cup of chicken stock.

Allow the mixture to simmer for a couple of minutes until heated through and the flavors meld together. 

If you prefer a thicker sauce, you can add a cornstarch slurry (1 tablespoon of cornstarch mixed with 1 tablespoon of water) to thicken it further.

Serve the Roasted Cashew Chicken over a bed of cooked jasmine or coconut rice.
