Step 1

Preheat oven to 180C.

Step 2

Sift flour and salt. Add sugar and rub in butter lightly.

Step 3

Add cheese and diced bacon and mix together.

Step 4

Pour in milk almost at once, working lightly into a soft dough.

Step 5

Turn on to a lightly floured board, knead as lightly as possible.

Step 6

Roll out and stamp out with a round cutter.

Step 7

Glaze with yolk of egg or milk and place on lightly greased scone or flat tray.

Step 8

Bake in oven for 7 to 10 minutes.
