Step 1

Peel and cut the potatoes into ½ inch thick long sticks. ( Or desire chip shape. )

Step 2

Place them in the cold water for 5 minutes, rinse and drain the water out.

Step 3

Then boil the potatoes in the hot boiling water for 3-4 minutes. Remove from water and let it cool down over the clean cloth or paper towel.

Step 4

Once the potatoes are cool and dry, place them in a large bowl and toss them with corn starch. Toss the excess flour out before frying.

Step 5

Heat the vegetable oil to medium-high heat about 330°F and fry the chips for 4-5 minutes. Remove from oil and set it aside for 8-10 minutes. ( Meanwhile, you can prepare the cheese sauce. )

Step 6

Then reheat the oil to high heat about 350°F and add the single fried chips. Fry 2-3 minutes or until crispy. Remove from oil and place the chips over the paper towel.

Step 7

Heat the pan into low-medium heat and add a tablespoon of butter. Once the butter is melted add the plain flour and stir it well for 1-2 minutes.

Step 8

Next, pour the milk gradually and stir it well until the sauce is creamy.

Step 9

Now add the grated cheese and stir gently until the sauce is glossy.

Step 10

To serve, add the fried chips to the serving plate. Sprinkle salt and pepper to your taste. Pour the cheese sauce over the fried chips and sprinkle chopped parsley for a garnish.
