Step 1

Bring a large pot of salted water (at least 3 quarts) to a rolling boil.

Step 2

Add in the cubed potatoes and stir.

Step 3

Allow to boil for 20 minutes or until fork tender. Stir occasionally.

Step 4

Drain and add potatoes to a large bowl.

Step 5

Use a potato masher or large fork to mash the potatoes to your liking (I like some texture. *SEE NOTE)

Step 6

Stir in the vegan butter, almond milk, nutritional yeast, chives, and salt and pepper.
