Vegan Mashed Potatoes are a must for any dairy-free eaters. You can still get creamy, "cheesy" mashed potatoes without using cow's milk or butter. These dairy free mashed potatoes are the perfect vegan side dish for any meal, and the flavor is unbeatable!

Cheesy Vegan Mashed Potatoes Recipe (Dairy Free)

potatoes (about 2 lbs, peeled and cubed)

vegan butter

almond milk

Bob's Red Mill Nutritional Yeast

chives

salt

black pepper

Bring a large pot of salted water (at least 3 quarts) to a rolling boil.

Add in the cubed potatoes and stir.

Allow to boil for 20 minutes or until fork tender. Stir occasionally.

Drain and add potatoes to a large bowl.

Use a potato masher or large fork to mash the potatoes to your liking (I like some texture. *SEE NOTE)

Stir in the vegan butter, almond milk, nutritional yeast, chives, and salt and pepper.

My take on the classic - shepherd's pie! Of course, like with any of my other recipes this shepherd's pie is loaded with herbs and spices to give it the best flavor. Finally, we'll top it off with the cheesiest Irish cheddar mashed potatoes your shepherd's pie has ever seen!

Allow the gravy to come to a simmer before reducing the heat to low and letting it simmer for 15 minutes. Remove the herbs, stir in the peas, taste and adjust with salt and pepper as desired.

milk (50 milliliters)

mature(sharp) cheddar cheese (80 grams)

vegetarian parmesan cheese (30 grams)

cream cheese

tbsp of finely chopped flat-leaf parsley

Add the chopped potatoes to a large saucepan and cover with cold water. Add a good pinch of salt.Bring the pan to the boil then reduce to a medium simmer and half cover with a lid.Cook until the potatoes are tender, about 15 minutes, then drain the potatoes in a colander and return them to the pan.Cover the potatoes then let them steam over a medium heat for 2 minutes. Give the pan a good shake.Meanwhile, heat the milk in a small saucepan.

Using a potato masher mash the potatoes until they are smooth.Add the butter and half the milk to the potatoes and stir vigourously. Add more of the milk now, you may not need to add all the milk, the potatoes should be creamy, not watery.

Stir in the cheese and keep stirring until the cheese has been incorporated into the mash.Season now with salt and black pepper to your own taste.

Serve immediately with a pat of butter and the chopped parsley if using.

The Best Mashed Potatoes

Yukon Gold potatoes

heavy cream

unsalted butter

Peel and dice potatoes, making sure all are in about 1 inch cubes.

Place in a large pot and cover with water. Bring to a boil over medium-high heat and then reduce heat to medium low to maintain a rolling boil. Cook until potatoes are fork tender and you can easily pierce them with a fork when touched.

Remove the potatoes from the heat and drain off the water. Place the diced potatoes through a ricer and then place back into the warm pot. Alternatively, if you don&#x27;t have a ricer, mash the potatoes with a masher and place back into the warm pot

Add the cream, butter, Parmesan, mascarpone and garlic and stir to incorporate. Season with salt and pepper and fold in the chopped chives before serving.

Cheesy mashed potatoes are loaded with cream cheese and cheddar cheese for a great side dish. They are baked to perfection.

Clean and peel the potatoes. Then quarter them.

Place the potatoes in a large pot and cover them with water. Bring to a boil and simmer for about 10-15 minutes until the potatoes are fork tender.

Drain the potatoes and then return them back to the pot.

Then add in the butter, milk, salt, pepper, sour cream and cream cheese. Use an electric mixer to blend the potatoes until they are light and fluffy.

Preheat the oven to 350 degrees F.

Place the mashed potatoes in a 9X9 baking pan then top it with the shredded cheddar cheese.

Cover with foil and bake for 10-15 minutes until the cheese is completely melted.

Top with the chives if you prefer.

Serve immediately while warm and enjoy!
