Chill a cocktail glass in freezer until chilled, at least 10 minutes. Add absinthe to chilled glass and swirl around glass. Discard liquid. Fill a small glass or cocktail shaker with ice. Add cherry juice, bitters, whiskey, and cognac. Stir until chilled then strain into cocktail glass. Garnish with a lemon peel and maraschino cherry.
