Step 1

Lightly grease a large glass bowl and set aside. Place water, yeast and sugar into mixing bowl and mix 20 sec/speed 2.

Step 2

Add flour, cornmeal, butter, 1 oz olive oil and 2 tsp salt and knead Dough /4 min. Transfer dough to prepared bowl and shape into a ball. Cover with cling wrap and allow to rise in a warm spot until doubled in size (approx. 1 hour). Meanwhile, prepare your toppings and sauce.

Step 3

Place 7 oz mozzarella into mixing bowl and grate 10 sec/speed 8. Transfer to a bowl and set aside. Place remaining 6 oz mozzarella into mixing bowl and grate 10 sec/speed 8, transfer to bowl with grated mozzarella.

Step 4

Place 4 oz Parmesan into mixing bowl and grate 10 sec/speed 10. Transfer to a separate bowl and set aside. Place remaining 4 oz Parmesan into mixing bowl and grate 10 sec/speed 10, add to bowl with previously grated Parmesan and refrigerate cheeses until needed.

Step 5

Place Italian sausage into mixing bowl, place simmering basket onto mixing bowl lid and cook 15 min/212°F//speed 0.5. Transfer sausage to a bowl lined with paper towels and set aside.

Step 6

Place onions, garlic and 0.5 oz olive oil into mixing bowl, insert measuring cup and chop 5 sec/speed 5, then without measuring cup, sauté 5 min/250°F/speed 1.

Step 7

Add tomatoes, 1 tsp salt, basil, oregano, rosemary and chili flakes, place simmering basket onto mixing bowl lid and cook 5 min/212°F/speed 1. Set sauce aside until ready to use.

Step 8

Preheat oven to 425°F. Place risen dough in the center of a deep dish pizza pan (14 in.). Flatten dough into a disk shape and begin evenly pressing the dough outwards to the edge and up the sides of the pan. Cover with cling wrap and allow to rest 10 minutes.

Step 9

Once the dough has rested, stretch dough one last time out to the edge of the pan and up the sides. Prick the pizza base (not edges) every inch or so with a fork. Parbake crust for 10 minutes (425°F).

Step 10

Sprinkle reserved mozzarella evenly over the pizza. Next, layer the pepperoni, salami, Canadian bacon and reserved Italian sausage. Pour reserved tomato sauce evenly over the top. Bake for 25-30 minutes (425°F) until crust is golden brown and sauce is bubbling.

Step 11

Sprinkle reserved grated Parmesan cheese over the top of the pizza. Allow to rest at least 5 minutes before slicing.
