Step 1
Heat a large skillet over medium heat and add in the butter and olive oil.
Step 2
While the pan is heating, dice your onions, mince the garlic, and split each chicken breast in half to make them thinner.
Step 3
Season the chicken liberally with salt, pepper, garlic powder, and paprika. (I used about 1/2 teaspoon of each) Set the chicken aside.
Step 4
Once the butter in the pan has melted, add in the onions and minced garlic. Allow to cook for about 5 minutes or until softened.
Step 5
Sprinkle the flour into the pan and whisk until you see no more dry flour spots. cook while whisking for about 1 minute.
Step 6
Pour in the chicken broth and 1/4 teaspoon each of: salt, pepper, garlic powder, oregano, and paprika.
Step 7
Bring everything up to a bubble (it should start to thicken) then add in the seasoned chicken.
Step 8
Lower the heat to medium-low and allow the chicken to simmer (slow smaller bubbles) for about 15 minutes or until cooked throughout.
Step 9
Use tongs to remove the cooked chicken from the gravy. Add it to a bowl or plate and shred the meat then add it back into the gravy.
Step 10
Serve over mashed potatoes or biscuits and enjoy!
