Step 1
Preheat the oven to 350 degrees.
Step 2
Spray a muffin tin with cooking oil and then place the wonton wrappers in each well of the tin, pushing down into the well to make the cup.
Step 3
Spray the wrappers with more oil and bake for 10 minutes or until lightly browned.
Step 4
While the wrappers are baking, combine the chicken, Cooper® Sharp cheese, cream cheese, sour cream, bacon bits and ranch seasoning in a medium bowl and mix well.
Step 5
Remove the baked wrappers from the oven and let them cool slightly.
Step 6
Carefully spoon the chicken mixture into each cup, dividing equally between them all. Sprinkle with additional bacon bits and shredded cheese.
Step 7
Return the tin to the oven and bake the cups an additional 8-10 minutes or until the cups are golden brown and the cheese is melted. Serve immediately with a sprinkle of parsley.
