Step 1

Preheat the oven to 350 F.

Step 2

Heat 3 tbsp of olive oil in a medium 10-12 inch cast iron skillet and over medium heat.

Step 3

Season chicken with 3/4 tsp of salt and 1/4 tsp pepper and add it to a skillet.

Step 4

Sear chicken on all sides until nice and brown, about 15-20 minutes. Transfer chicken to a clean plate.

Step 5

In the same skillet, heat the remaining 2 tbsp of oil, add onion, carrot, bell pepper, celery, garlic and rosemary and sauté stirring occasionally for 7 minutes.

Step 6

Add wine and stir for another 5 minutes scrapping the brown bits from the bottom of the pan.

Step 7

Add chicken broth, the remaining 1/4 tsp of salt, tomatoes, return chicken to a skillet and braise in the oven for 30-35 minutes or until the instant meat thermometer reads 175 F.

Step 8

Carefully remove skillet from the oven, adjust the seasoning if necessary, sprinkle with parsley and serve immediately.
