Step 1

In a bowl, add chicken, oil, curry powder, paprika, turmeric, salt and lemon juice and mix well

Step 2

Marinate the chicken overnight

Step 3

Soak the lentils for 15 mins and discard the water

Step 4

Transfer to pressure cooker, add the water and cook for 10 mins. If you don't have a pressure cooker, simply boil in a pot.

Step 5

Drain the water from the lentils and set aside.

Step 6

In a wide based pot, add the chicken, ¼ cup water and cover. Cook over medium heat for 10 mins

Step 7

Stir in the onion, ginger, curry leaves, chilies, tomatoes and lemon juice and cover. Continue to cook for another 15 mins

Step 8

Add the cooked lentils and cook for 5-10 mins to combine the flavors and cook through the chicken. Cover the pot with the lid during this process

Step 9

Sprinkle with garam masala, fresh ginger, cilantro and squeeze of lemon juice

Step 10

If using a slow cooker: fry the onions and spices in a separate pan and then add on top of the chicken and lentils in the slow cooker. Cook for 4 hours on high or 8 hours on low until the chicken is cooked through.
