Looking for an easy and healthy weeknight curry? Skip the take out, and make this Chicken Dhansak with lentils. Packed full of flavor, this restaurant-style curry brings the creaminess of lentils together with traditional South Asian spices to create a hearty and nourishing meal for the entire family. Sprinkle with fresh cilantro and grated ginger for that perfect garnish.

Chicken Dhansak

sunflower oil

curry powder

paprika

turmeric powder

tsp sea salt

lemon juice (juice of 1 lemon, medium)

brown lentils

water (to cook lentils)

water (to cook curry)

onion (large, finely chopped)

½ inch ginger (fresh, grated)

curry leaves

green chili (reduce according to taste)

tomatoes (small, diced in small pieces)

tsp garam masala

cilantro (fresh, finely chopped)

lemon juice

In a bowl, add chicken, oil, curry powder, paprika, turmeric, salt and lemon juice and mix well

Marinate the chicken overnight

Soak the lentils for 15 mins and discard the water

Transfer to pressure cooker, add the water and cook for 10 mins. If you don't have a pressure cooker, simply boil in a pot.

Drain the water from the lentils and set aside.

In a wide based pot, add the chicken, ¼ cup water and cover. Cook over medium heat for 10 mins

Stir in the onion, ginger, curry leaves, chilies, tomatoes and lemon juice and cover. Continue to cook for another 15 mins

Add the cooked lentils and cook for 5-10 mins to combine the flavors and cook through the chicken. Cover the pot with the lid during this process

Sprinkle with garam masala, fresh ginger, cilantro and squeeze of lemon juice

If using a slow cooker: fry the onions and spices in a separate pan and then add on top of the chicken and lentils in the slow cooker. Cook for 4 hours on high or 8 hours on low until the chicken is cooked through.

turmeric

1kg (2lbs) chicken breasts, chopped

onions, finely chopped

garlic cloves,

5cm (2in) ginger root, peeled and grated

(1 cup) split red lentils, green lentils

chopped tomatoes

500 milliliters (2 cups) curry base sauce

milliliters (1 cup) chicken stock

milliliters (1 tsp) garam masala

coriander

milliliters (1 tsp) chilli powder (optional)

pineapple juice

½ pineapple, cored and sliced

Salt and pepper

Heat 1 tbsp–2 tbsp of ghee over a medium heat in a large ovenproof casserole pan or large frying pan. 

Add the onions and fry for 5 minutes. Stir regularly 

Add the chicken pieces to the onions and cover with 1 tsp of turmeric, then brown on all sides in the casserole pan. Stir over a medium heat. 

Add garlic and ginger or the garlic ginger paste, stir and fry for 1 minute.

Add the chopped tomatoes, stir and cook for 1 minute

Pour in the curry base sauce, lentils and 250ml (1 cup) of chicken stock into the pan and bring the contents to a low simmering heat. 

Cook for 30 minutes, but check in every 10 minutes or so and give it a stir, to make sure there’s enough liquid in the pot (you don&#8217;t want the lentils sticking to the bottom of the pan. If not, top up with a bit of water or some chicken stock. 

After the chicken pieces and lentils are cooked, add 1 tsp of curry powder, 1 tsp of garam masala, 1 tsp of chilli powder (optional), ground coriander, pineapple juice (or lemon juice) and pineapple and give it a stir. 

Simmer for another 5–10 minutes on a low to medium heat.

Serve with your favourite Indian side dishes. It freezes well too. Enjoy!

It's a tough one as I use chicken for most of my favourite dishes but it's 50/50 between a chicken pathia or creamy Tuscan chicken

I do like a Portuguese peri peri chicken, charred.
