Step 1

Clean the chicken gizzards and wash them. Put the prepared washed gizzards in a pot with a little water - enough to cover them. Once they come to a boil, remove from the heat.

Step 2

Wash them, pour in new water with a little salt and leave them to boil until completely cooked. Once ready, drain them out.

Step 3

Clean the garlic and mash it in a mortar and pestle. Mix it with the balsamic vinegar. Stir the mixture very well.

Step 4

Melt the butter in a pan and heat it up. Pour in the chicken gizzards and leave them to cook until they gain a crisp. Add the black pepper and sprinkle on the universal spice. Stir. Pour in the garlic and stir again.

Step 5

Remove from the stove. Serve as is or with a suitable garnish .
