Step 1
Make the pasta. Bring a large pot of water to a boil and cook pasta according to the directions on the package until al dente. When draining, reserve 2 tablespoons of pasta water.
Step 2
When the pasta has 5 minutes left, start making the chicken. Heat a large skillet over medium-low heat, add oil, and let it get hot, about 30 seconds. Add chicken and garlic and cook for 5-6 minutes stirring occasionally, until browned on the outside and almost cooked through (it will continue to cook while adding remaining ingredients). Add Italian seasoning and salt and pepper and stir to coat. If there is a lot of liquid in the pan, remove some of it as it will water down the sauce.
Step 3
Add pasta sauce and parmesan cheese and mix to combine.
Step 4
Drain pasta, saving 2 tablespoons of the pasta water. Add pasta and pasta water to the pan and mix well to combine. Top with mozzarella cheese, cover with a lid and let melt, about 1-2 minutes. Garnish with optional toppings and enjoy!
