For a touch more sweetness, substitute halved grapes for the apple. You can also chop the apple and add it to the salad mixture.

Chicken Salad Melts

shredded skinless, boneless rotisserie chicken breast

plain fat-free Greek yogurt

¼ cup canola mayonnaise (such as Hellmann's)

dill

salt

black pepper

green onions, thinly sliced

whole-wheat English muffins,

sharp cheddar cheese, shredded (about 3/4 cup)

apple

Bibb lettuce leaves

Combine first 7 ingredients in a medium bowl; stir well. Place 1/3 cup chicken mixture on bottom half of each muffin. Top evenly with cheese. Broil 1 minute or until cheese melts. Top sandwiches evenly with apple, lettuce, and top halves of muffins.


Outstanding!  Made it for dinner last night and it was so good!  I also added a few green grapes to the chicken salad as well as some chopped celery.  The flavor was great and it was totally filling.  Will DEFINITELY be making these again in our house! :)

These were really good and the whole family loved them.  I chopped the apple and added it to the chicken mixture vs. on top.  I omitted the lettuce and served them open-faced with a little chicken mixture and cheese on each side.  It made it seem like a huge portion!  Happy family.  :-)

Great lunch and I loved it on the english muffins.  Great idea for something different.  Next time I think I will chop the apples up in the salad.  The slices kept slipping off when I tried to eat the sandwich.  The cheese melted up great in the microwave at the office the next day.  Will definitely make again.

Really delicious and simple.  I chopped the apple into the salad to make leftovers a little easier.  Highly recommend!

Delicious; the apples add just the right amount of sweetness for me and I really like the dill instead of using dill pickles.  Used whole wheat burger buns, because it's what I had on hand, also only used half of bun &amp; served open face.
