Step 1
Fill a medium saucepan with water and bring to the boil over high heat. Add the green beans and cook over high heat for 2 minutes or until bright green and tender crisp. Drain, then rinse under cold running water, and drain well again (See microwave tip).
Step 2
Place chickpeas and sour cream in bowl of a food processor. Process until smooth. Place in a medium bowl. Add shallots, celery, lemon juice, coriander and cumin. Mix well. Taste and season with salt and pepper.
Step 3
Spread the chickpea mixture over the bread slices. Place a single layer of the beans on half of the slices, and sandwich with the remaining bread slices. Cut the sandwiches in half.
