Step 1
Preheat oven to 180C. Grease and line a lamington pan with baking paper.
Step 2
In a large bowl, combine flour, sugar, cocoa, butter, vanilla and 1 1/2 cups coconut. Mix well to combine. Press evenly over base of prepared pan.
Step 3
Bake for 15 - 20 minutes or until a skewer inserted into the centre comes out clean. Allow to cool completely in pan.
Step 4
To make icing: Sift icing sugar and cocoa into a bowl. Add butter and 2 tablespoons hot water. Stir until smooth, adding more water if necessary.
Step 5
Spread over cooled slice and sprinkle over remaining coconut. Stand at room temperature until set. Cut into squares. Store in an airtight container.
