Step 1
Chop the chocolate roughly and place in a heat safe bowl.

Heat the cream in a small saucepan over medium high heat just until it begins to come to a boil.

Remove cream from heat.

Pour the cream through a fine-meshed sieve into the bowl with chocolate.
Step 5
Whisk the cream and chocolate together until the chocolate is completely melted and smooth.
Step 6
Add the liqueur (if using) and vanilla. Continue Stirring.
Step 7
Place in the fridge for 1 hour to stiffen.
Step 8
With 2 teaspoons, spoon round balls of the chocolate mixture onto a baking sheet lined with parchment paper.
Step 9
Roll each ball of chocolate in your hands to roughly make a round ball.
Step 10
Roll in powdered sugar, or whatever toppings you choose (sprinkles, chocolate, nuts, etc)
Step 11
These will keep in the fridge for two weeks, but are best served at room temperature.
