Name: Chopped Feta Salad

Ingredients: 8 cups chopped romaine lettuce; 1/2 English cucumber (peeled and diced in large chunks); 1/3 cup Feta cheese (crumbled); 1/8 small red onion (sliced lengthwise); 1/4 cup olive oil; 2 tablespoon red wine vinegar; 1 1/2 tablespoons fresh chopped dill; 1/2 teaspoon kosher salt; fresh black pepper (to taste)

Chopped salad with romaine lettuce, Feta cheese, cucumbers, red onion and dill tossed with a simple red wine vinaigrette. An easy side salad to go with all your Mediterranean dishes.

Chopped Feta Salad

romaine lettuce

cucumber

Feta cheese (crumbled)

red onion (sliced lengthwise)

olive oil

red wine vinegar

dill

salt

black pepper (to taste)

Toss all the ingredients together and serve right away.

So simple and delicious. We topped it with Greek seasoned grilled chicken breast and made it a meal. Wonderful!

This is my go-to salad. It is just the perfect Greek inspired salad. I add Kalamata olives to mine.

In reply to the comment about possibly using fat free feta….I agree with the person who said it’s chalky and not worth it. BUT…if you can find the reduced fat feta, it’s a good compromise. Not as creamy as full fat, but not bad, and it brings down the points.

Just made this again tonight (a year and 3 months after my last comment).  I forgot how good this was.  My husband and I enjoyed it for dinner tonight with a piece of grilled chicken.  The only thing I added was a few kalamata olives.   Again, thanks for sharing all your wonderful and healthy recipes.

My husband and I loved this salad.  I cut it in half, but otherwise followed the recipe exactly.  As several others have said in their comments - the dill really makes the salad.  I might try adding some kalamata olives next time.

This is one of the best salads I have ever had!! Who knew that dill could be so delicious!! It makes this salad. I added pickled beets to mine. Yum!!
