My favorite salad! I make it at least once a week. I prefer savory so I don’t add any sugar. I also add pistachios-delicious!

This is amazing and as far as the dressing is concerned, we had every ingredient in our pantry! I did not add a sweetener because the Fuji apples added all the sweetness we needed. Have made it three times this week! No spinach went bad!

I also added teaspoon Honey to the dressing, everybody loved it . Certainly will make it again

Made this today to try out before serving it to guests for Thanksgiving.  Was great!  I just did a couple of small alterations based on the ingredients I had available.  I used a mix of spinach and arugula for the greens and a Honeycrisp apple instead of a Fuji.  I also used a sweet onion instead of a red onion.  It was delicious and I think I will make it for Thanksgiving.   Seems like it will be a fresh, light side to offer to guests to help balance out all the other rich foods that will be on the table that day!

I agree with everyone—simple and delicious. If you don’t have honey you could add a pinch or two of sugar which is what I did.

Balsamic vinegar will also sub for honey. 5

Whisk together the ingredients of the dressing until it’s well blended.

Assemble the salad into one large bowl or two separate bowls. Start by placing the greens at the bottom, followed by interchanging layers of the sliced beets and sliced oranges. Crumble feta cheese on top along with walnuts and drizzle the dressing on top.

Enjoy at room temperature or cold.

How do you usually prepare corn on the cob?

So good, so easy!  It's become my go to summer salad recipe. Everyone loves it and can be made ahead.  I've made it without the onion and it is just as good.

Tasty; I add a little honey to tone down the red onion.

You'll Be Making This Corn Salad On Repeat All Summer Long

This versatile farro salad features tart cherries, arugula, apples, and feta cheese; it works as a side dish or a main dish grain bowl.

Farro Salad with Tart Cherries

dry pearled farro

Oregon Fruit tart cherries

white wine vinegar

maple syrup

shallot

tart apple

baby arugula

In a saucepan over high heat, bring 9 cups of water to a boil. Add the farro, stir once, and continue to boil uncovered for about 20 minutes, bubbling rapidly. Taste a grain of farro; if the grain is plump and tender, remove the pan from the heat and pour it into a strainer. (If not, continue to cook and taste until tender.) Rinse with lukewarm water to cool slightly and shake it dry. Brands of farro can vary, so adjust the cook time as necessary. Or, if you have an Instant Pot, go to Instant Pot Farro.

For the vinaigrette, drain the cherries. Finely chop 2 tablespoons of the cherries, then reserve the remainder for the salad. Combine chopped cherries, vinegar, maple syrup, and mustard in a small bowl. Drizzle in oil, whisking constantly, until incorporated.

With the remaining cherries, roughly break some of them in half, or slice them in half. Thinly slice the shallot into rings. Chop the apple into very small bite-sized pieces. When farro is done, mix it with 1 teaspoon kosher salt. Then in a large bowl, combine the farro, cherries, shallot, apple, arugula, feta crumbles, and cherry vinaigrette. Top with fresh ground pepper. Taste and adjust flavors as desired. (When serving leftovers, drizzle a bit of olive oil over the salad if you find it to be dry.)

This chunky Greek salad recipe is quick to make and packed with protein. The wholemeal pitta makes a high-fibre accompaniement.

tomatoes,

½ cucumber, deseeded and roughly chopped

grams/3½oz reduced fat feta cheese,

grams/1¾oz black olives, oil

lemon juice

sea salt and black pepper

A wonderfully simple side salad that still delivers on flavour. Make sure to use good quality feta - it's worth it. 

Sun-blushed tomato and feta salad

150 grams/5½oz sun-blushed tomatoes (see tip), quartered

black olives

tbsp olive oil tomatoes

150 grams/5½oz good-quality feta cheese, crumbled into small chunks

Pair piquant feta with green lentils, sweet clementines and crunchy peppers in this colourful packed lunch. It’s low-calorie and rich in vitamin C and fibre

lemon

clementines, 1 zested, flesh sliced

garlic

can green lentils

tbsp balsamic vinegar

½ tbsp rapeseed oil

red pepper

walnut halves

Mix the onion with the lemon juice, lemon and clementine zest and garlic.

Tip the lentils into two bowls or lunchboxes and drizzle over the balsamic and 1 tbsp oil. Heat the remaining oil in a large non-stick wok, add the pepper and stir-fry for 3 mins. Tip in half the onion and cook until tender. Pile on top of the lentils, then mix the clementines, remaining onions, feta, mint and walnut pieces.

A little sweet, a little salty and incredibly satisfying, this roasted beetroot feta salad tastes as beautiful as it looks too. Simply roasted beetroots, and the best salad dressing ever tossed through salad leaves and topped with walnuts and Danish feta.

Roasted Beetroot Feta Salad

raw beetroot

rocket (arugula)

75 g Danish feta

walnuts ((notes 1))

pomegranate arils (seeds), optional ((notes 1))

balsamic vinegar ((notes 1))

Preheat the oven to 200℃ (180℃ fan) / 395℉ fan forced

Scrub the beetroot, then cut them in half. Line a casserole dish with a sheet of aluminium foil, twice it's length. Place the beetroot in the middle and wrap the foil around them.

Roast for 45 minutes to 1 hour or until soft enough to poke a fork in.

While the beets are roasting, combine the dressing ingredients in a small jar with a lid and shake well to combine. Set aside.

Open up the foil parcel and let them cool just enough to handle.

Put on some latex food-safe gloves and peel away the skin. A fork will help. Cut them into large bite-sized chunks.

Place the rocket into a serving bowl and drizzle over half the dressing. Toss to coat. Check the flavour and add a little more if desired, saving some to drizzle over the beetroot.

Add the beetroot over the top of the rocket, and drizzle a little more dressing over.

Crumble over the feta in large pieces, along with walnuts and the pomegranate seeds if using.

Heat oven to 200C/fan 180C/gas 6. Heat the grill to its highest setting. Cut the peppers into quarters, then place them, skin-side up, on a baking sheet. Grill until blackened. Place in a plastic bag, seal, then leave for 5 mins. When cool enough to handle, scrape skins off, discard, then set the peppers aside.

Place the aubergines on a baking tray, drizzle with olive oil and cinnamon, then season with salt and pepper. Roast until golden and softened – about 25 mins.

Meanwhile, combine all the dressing ingredients and mix well. To serve, place the aubergines, green beans, onion and peppers on a large serving plate. Scatter with the feta and pomegranate seeds. Pour the dressing over, then finish with the parsley.

Combine Vegetables: In a large salad bowl, toss together tomatoes, cucumber, and red onion.

Add Flavorings: Mix in the Kalamata olives and crumbled feta cheese.

Prepare Dressing: In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.

Tomato Feta Salad

cherry tomatoes (red or a medley)

red onion (small-diced)

champagne vinegar

basil leaves (chopped)

parsley (chopped)

Cut the tomatoes in half and place them in a large bowl. Add the onion, vinegar, olive oil, salt, pepper, basil, and parsley and toss well.  Dice the feta into a ½- to ¾-inch dice, crumbling it as little as possible.  Gently fold it into the salad and serve at room temperature.

Best salad ever!  I make it on repeat with feta or mozzarella.  So good!

This recipe is SOOOO GOOOODDDD!!! I initially made the feta and tomato salad as per the recipe.  It was FANTASTIC!   Then I made the recipe and added it to some warm farfale pasta that I made.  And it was FANTASTIC on my pasta as well!   Yum!! Gaby's recipes NEVER disappoint!!!

Goat's Cheese, crumbled

Step 1

Place the salad leaves, watermelon, onion and goat’s cheese in a large serving bowl.

Step 2

Combine the oil, garlic and 1/4 cup (60ml) orange juice in a bowl. Drizzle over the salad. Season. Sprinkle with orange zest.
