Step 1
In a mixing bowl, whisk together the olive oil, honey (or maple syrup), Dijon mustard, lemon juice and zest, orange juice and zest, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper until well blended.
Step 2
Reserve about 2 tablespoons of the marinade for basting later.
Step 3
Put the salmon fillet in a shallow dish or a large resealable plastic bag.
Step 4
Pour the marinade over the salmon, ensuring it is evenly coated. Cover the dish or seal the bag and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.
Step 5
Preheat your oven to 400°F (200°C).
Step 6
Line a baking sheet with parchment paper or lightly grease it with cooking spray.
Step 7
Place the marinated salmon fillet skin-side down on the prepared baking sheet.
Step 8
Brush the reserved marinade over the top of the salmon fillet.
Step 9
Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork. Baste once more halfway through cooking for added flavor.
Step 10
Remove from the oven and transfer to a serving platter. Garnish with fresh lemon slices and additional herbs, if desired.
Step 11
Serve warm, and savor your festive Christmas Salmon!
