Prep: Preheat your oven to 400 degrees F. Slice your peaches. Line a baking sheet with parchment paper, and toss the peach slices with the sugar, spices, and vanilla (optional). Let the peaches rest for 10 minutes to get the juices going.
Step 2
Roast the Peaches: Roast the peaches for 7-16 minutes, until desired tenderness is reached. Set aside to cool or enjoy warm over vanilla ice cream!

Serve + Store: Store leftover peaches in an airtight container in the fridge for up to 3 days.
