Preheat oven to 350°F (175°C) and lightly grease a 9-inch pie dish.

Heat olive oil in a skillet over medium heat. Sauté chopped onion for 3–4 minutes until translucent. Add garlic and cook for another 30 seconds.

Add spinach and cook until wilted, about 2–3 minutes. Season lightly with salt and pepper, then remove from heat and let cool slightly.

Bake for 35–40 minutes until the center is just set and the top is lightly golden. Tent with foil if the edges brown too quickly.

Let the quiche rest for 10 minutes before slicing and serving.
