This easy Crustless Quiche Lorraine with bacon and Gruyere is a lighter take on the classic, made lighter without the crust.

Crustless Quiche Lorraine 

cooking spray

bacon

Gruyere cheese

2% milk

half & half cream

eggs

salt

black pepper

nutmeg

chives

Preheat your oven to 350F degrees. Spray a pie dish with oil.

Cook the bacon: Heat a large frying pan on medium heat. Arrange strips of bacon in a single layer on the bottom of the pan.

Slowly cook the bacon, turning the strips over occasionally until they are nicely browned then lay the cooked strips on a paper towel, chop the cooked bacon crosswise into 1/4-inch to 1/2-inch pieces.

Evenly spread the bacon in the dish and top it evenly with the grated gruyere cheese.

Make the custard mixture by whisking together the milk, half and half, eggs, salt, black pepper, and the nutmeg.

Pour the custard into the dish and top with chives, bake 35 minutes, until the center is set.

Cut the quiche into 6 pieces and serve.

Crustless Quiche Lorraine Recipe

This is the VERY BEST crustless quiche! It's known as Impossible Quiche in Australia! Added flour sinks to the bottom during cooking, creating a thin pancake-y crust. You can either add caramelized onions and mushrooms, ham and cheese, like I’ve stated in the recipe below, or you can keep things super simple and add raw finely chopped veggies like onions, peppers and tomatoes.

The very best crustless quiche (Impossible Quiche!)

onion (sliced thinly)

butter (for cooking)

mushrooms ((around 4 medium mushrooms))

ham (chopped)

grated cheese ((strong cheddar cheeses

flour

milk

eggs (lightly whisked)

mustard ((I usually use wholegrain, but any mustard works))

salt & pepper (to taste)

Preheat the oven to 390F / 200C.

Melt the butter in a large frying pan or saucepan, then cook the onions slowly for about 10 minutes or until soft and beginning to caramelize.

Add the mushrooms to the onions in the pan and cook for a further couple of minutes.

Grease a standard quiche dish (or other round pan) with a little butter, then spread the onions and mushrooms evenly over the bottom. Scatter over the chopped ham and cheese.

Slowly add the milk to the flour in a large jug. Whisk continuously so that there are no lumps, then whisk in the eggs, mustard, and salt and pepper.

Pour the egg mixture over the fillings in the dish/pan, then bake for 30 (to 40) minutes or until the mixture is just cooked in the centre. Slice and serve!

Excellent breakfast or brunch that keeps for days, serve slices like quiche OR stuff into rolls, make burritos! (see in post for photo)

Crustless Quiche - Ham and Cheese

cream (, heavy/thickened (halve if subbing milk, Note 1))

salt ((Note 2))

tsp black pepper

100 grams/ 3.5 oz ham (, diced)

shredded cheese ((anything that melts except mozzarella, Note 3))

green onion (, sliced)

Preheat oven to 180°C/350°F. Grease with butter or spray a 22.5cm / 9" pie dish (Note 4)

Whisk eggs, cream, salt and pepper.

Scatter most of the ham, cheese and green onion in the pie pan.

Pour in egg mixture. Top with remaining ham, cheese and green onion.

Bake 35 minutes until golden on top and centre barely wiggles. Don't overcook, it will lose custardy-ness.

Remove from oven, rest 5 minutes and watch it deflate!

Cut then serve with a simple side salad, or stuff into soft rolls, or wrap into burritos (then pan fry to crisp!)

I love pastry (you can tell that by looking at me).  Some days there isn’t enough time to make it before the family starts asking “when will dinner be ready?”  Here is my shortcut quiche recipe, try it, its quick and easy and you can use leftovers for the filling.  If you don’t have a Thermomix, you can still make this recipe, just chop everything by hand and mix the ingredients with a spatula or wooden spoon.

Crustless Quiche

cheese

g butter

parsley

cherry tomatoes

75 g plain flour

Salt and pepper to season

Preheat the oven to 180c

Grate the cheese in the TM (Thermomix) bowl on speed 8 for 6-8 seconds and set aside

Add the small onion and parsley to the TM bowl chop for 2 -3 seconds on speed 6

Add butter and bacon and sauté for 2 mins/100c/speed 1 (MC off).

Add milk and eggs first then flour, cheese salt and pepper.  Stir to combine on reverse speed + 2 for 10 seconds or so.

Pour the mix into a pie dish. I like to use glass here, so it browns nicely on the bottom too.

Scatter the tomatoes on top.

And bake until golden brown and set. This should take 30 to 40 mins depending on your oven.

Petite Crust-less Quiche

oz turkey kielbasa (diced)

baby spinach

fat free milk (or milk of choice)

all purpose flour*

tsp salt

oz cheddar cheese

*For gluten free use GF all purpose flour.

Preheat oven to 350°F. Spray a nonstick muffin pan with olive oil spray.

Heat the oil in a large non-stick skillet over medium heat.

Sauté onions and salt for 5 minutes, until soft, add bell peppers, garlic, tomato, kielbasa sauté for another 5 to 7 minutes. Add spinach and cook until wilted, about 1 minute.  Set aside.

Meanwhile, in a large bowl, whisk the eggs, egg whites, milk, flour, salt and pepper until smooth.

Add the cheese and cooked kielbasa mixture to the bowl and mix well.

Pour into the prepared muffin pan and bake for 28 to 30 minutes, or until firm.

This easy to make quiche is perfect for make ahead and freezer meals. Full of fresh veggies, this crustless quiche is vegetarian, gluten-free and low carb.

Danish Creamery coconut oil butter spread (divided)

mushrooms

zucchini (sliced)

½ red onion (sliced)

cherry tomatoes (halved)

½ cups 2% milk

gruyere cheese

parsley (chopped)

Preheat oven to 375°F. Grease a 9-inch pie dish with cooking spray or butter.

In a medium skillet over medium heat, add 1 tablespoon butter and mushrooms. Sautee until softened and browned, about 5 minutes; transfer to the prepared pie dish.

In the same skillet, heat the remaining 2 tablespoons butter, add the zucchini, onions and tomatoes and saute until softened and lightly browned, about 5 minutes. Add to the mushrooms on the prepared pie dish. Sprinkle with ½ cup of gruyere cheese.

In a large bowl, beat the eggs with the milk, salt, pepper and nutmeg until well blended. Pour the egg mixture over the top of the vegetables. Sprinkle with the remaining ½ cup of gruyere cheese.

Bake in the preheated oven until a knife inserted in the center comes out clean, 30-35 minutes. Let stand 10 minutes before cutting.

Cut into 6 wedges, garnish with parsley and serve warm or at room temperature.

lump crab meat ((or flaked imitation crab torn into small pieces))

Preheat oven to 350 degrees F. Coat a 9-inch pie plate with nonstick cooking spray.

In a large bowl, whisk together the eggs, mayonnaise, milk, flour, salt, and sriracha. Stir in the cheese, crab, and scallions.

Pour mixture into prepared pie plate (and use a fork to distribute the contents, so you get the goodies in every bite!)&nbsp;

Bake until edges are puffed and a knife inserted in the center comes out clean, about 40-45 minutes. (If you notice the edges are browning too quickly, tent with foil.)

Let stand 10-15 minutes. Slice and serve!

This crustless quiche with spinach is an easy recipe that's perfect for brunch! The savory flavor will impress everyone.

Crustless Quiche with Spinach

frozen spinach*

Preheat oven to 375°F. Grease a 9” round pie dish.

Place the spinach in a colander and let warm water run over it until it is thawed, about 1 minute (some brands take a bit more effort to defrost: you can also use a microwave if necessary). Then use your hands to squeeze out as much excess liquid as you can.

In a large bowl, whisk the eggs. Then stir in the oregano, salt, garlic powder, cottage cheese, grated Parmesan cheese, spinach, and roasted red pepper. Add a few grinds of fresh ground black pepper if you like.

Pour the egg mixture into the prepared pie dish. Sprinkle the top with a few tablespoons of additional chopped roasted red pepper.

Bake the quiche for 25 to 30 minutes, until set in the center and golden around the edges. Allow to rest for at least 15 minutes before serving. (Storage info: This saves well! Store refrigerated for up to 5 days: you can eat it cold, room temp, or re-warm it. Try it in a sandwich!)

Can I make the on an air fryer? If so, what special instructions must I need to know?

This was delicious and so easy to make. It was perfect for a weeknight dinner. I will definitely be making this again.

We did this for Christmas morning.  It worked great!  But I did have to bake it 38 minutes.

Preheat oven to 350ºF. Lightly spray an 8x8-inch or 11x7-inch pan with cooking spray.

Cook ground beef in a skillet over medium heat until no longer pink. Drain fat. Add taco seasoning, water, and diced tomatoes and green chiles. Simmer for 5 minutes.

Spread taco meat in the bottom of the prepared pan. Top with shredded cheese.

Whisk together eggs, milk/heavy cream, and sour cream. Pour on top of the beef mixture.

Bake, uncovered, for 30 to 35 minutes.

A healthier quiche option with no crust and with homemade feta cheese!

Crustless Spinach and Feta Quiche

oz feta

garlic,

white onion, diced

Parmesan cheese, shredded

kosher salt

pepper

butter

Pre-heat oven to 350°.

Grease a pie dish with butter.  Add shredded parmesan cheese to bottom of dish and spread in a very thin layer.

In a large saute pan, heat olive oil on medium.  Add garlic and onion until translucent.  Add spinach and saute, mixing often until spinach is bright and wilted.  Remove from pan and put in a bowl.

In a separate large bowl, add 5 eggs, 2/3 cup of milk, salt, and pepper. Whisk well.

Add crumbed feta to bowl with spinach.  Add spinach mixture to large bowl with eggs.  Mix well.

Pour egg and spinach mixture into pie dish so that it fills dish but doesn't overflow.

Bake for 50 minutes until egg has set.

Serve and enjoy!
