Step 1

Preheat oven to 350°F (175°C) and lightly grease a 9-inch pie dish.

Step 2

Heat olive oil in a skillet over medium heat. Sauté chopped onion for 3–4 minutes until translucent. Add garlic and cook for another 30 seconds.

Step 3

Add spinach and cook until wilted, about 2–3 minutes. Season lightly with salt and pepper, then remove from heat and let cool slightly.

In a blender or food processor, combine cottage cheese, eggs, Parmesan, nutmeg (if using), salt, and pepper. Blend until smooth.

Step 5

Stir the spinach mixture into the blended custard. Pour the mixture into the prepared pie dish.

Step 6

Top with shredded mozzarella and red pepper flakes (if using).

Step 7

Bake for 35–40 minutes until the center is just set and the top is lightly golden. Tent with foil if the edges brown too quickly.

Step 8

Let the quiche rest for 10 minutes before slicing and serving.
