Step 1
Cut your apples into wedges, either with an apple cutter or small knife.
Step 2
In a medium-sized skillet, combine the two cups of apple juice and sliced apples.
Step 3
Turn the heat to medium/low until the juice starts to simmer.
Step 4
Cook for about 20 minutes, until they are fork tender. Stir and turn the apples occasionally.
Step 5
Remove the apples with a slotted spoon and place in an oven safe dish. Move the pan off the heat while you prepare the sauce ingredients.
Step 6
In a blender, combine the remaining 1/2 cup apple juice, apple pie spice, cornstarch, and sugar. Blend a few seconds until smooth.
Step 7
Put the skillet back on the heat and whisk the apple and cornstarch mixture into the hot apple juice. Turn the heat up to medium/high until it begins to bubble. Stir continuously until the sauce thickens.
Step 8
Pour the hot sauce over the cooked apples and serve.
