Step 1
Wash and cut your celery, carrots, and onion into a small dice.
Step 2
In a large stock pot, add some oil over medium high heat. Add the vegetables and cook for about 5 minutes or until they have begun to develop color and soften.

Add the chicken to the bottom of the pot and pour the chicken broth over the top. If you don't have enough liquid to cover the top of the chicken, add a bit of water. Bring to a boil then reduce the heat to medium low and cover. Cook covered for 15-20 minutes.
Step 4
Remove the chicken from the pot and set aside.
Step 5
Add the noodles and milk to the pot, bring to a boil and cook for the time the package of noodles specifies, likely 10-12 minutes. Be sure to stir frequently.
Step 6
While the noodles are cooking, shred the chicken. Place the broccoli in the microwave and cook it according to its packaging.
Step 7
Chop the broccoli into small pieces.
Step 8
Once the noodles have finished cooking, add the chicken and broccoli to the pot and stir. Season with salt and pepper to taste.
Step 9
