Step 1
Preheat oven to 200°C. Combine the potato, garlic, thyme and butter in a large bowl. Season well.
Step 2
Arrange the potato in an 8-cup (2L) ovenproof dish. Place the sage leaves randomly between the potato layers. Drizzle with stock.
Step 3
Bake for 1 hour or until the potato is golden brown and tender. Set aside for 5 mins to cool slightly before serving.
