Step 1
Melt butter or coconut oil in electric skillet on medium heat, 350*. Place shanks in skillet and season with salt and pepper.

Cook 4-5 minutes on each side, seasoning again when you flip them over.

Place shanks in greased crock pot.
Step 4
Add onion, garlic and Italian herbs to skillet. Add a bit more butter or coconut oil if needed. Cook about 3 minutes.
Step 5
Add the broth and stir gently to loosen any bits from the skillet and heat through.
Step 6
Pour over shanks in crock pot.
Step 7
Cover and cook on low for 8 hours.
Step 8
Serve.
