Preheat the oven to 350°F (175°C).

Cook the chicken sausage, shallot, and garlic in the olive oil in a skillet on the stovetop over medium heat. Crumble the sausage with aa spatula as it browns. It will take approximately 10 minutes.

In a medium-sized bowl, whisk together the eggs, pesto, milk, cheese, salt, pepper, and sun-dried tomatoes. Stir in the sausage mixture.
