Preheat oven 375 deg F (190 C).
Step 2
Placed roasted vegetables in a greased 9" pie dish.
Step 3
Sprinkle cheddar cheese evenly over vegetables.
Step 4
Using back of spatula, press cheese and and vegetables down.
Step 5
Mix eggs, milk, garlic powder, onion powder, salt, and pepper together.
Step 6
Pour milk egg mixture over vegetables.
Step 7
Sprinkle Parmesan over top.
Step 8
Bake for 45 minutes until knife inserted in middle comes out clean and top is lightly browned.
Step 9
Let cool 15 minutes before slicing and serving.
