Step 1

Peel, dice and boil the carrots. Drain when cooked, cool and transfer to a bowl.

Step 2

Boil the egg for exactly 10 minutes from when the water comes to a boil. Run under water to cool and peel. Finely dice the celery. Coarsely chop the olives with 1 Tbsp. capers.

Step 3

Add the olives, capers, diced celery and mayonnaise to the carrots and mix. Press the hard-boiled egg through a sieve and add this to the mixture; mix everything together and season with a pinch of salt.

Step 4

Line the inside of a small ladle with a slice of culatello or other fine cured ham; fill with a spoonful of the mixture and fold the ham over to close. Flip the onto a plate, so the seam of the bundle is on the bottom. Repeat with the remaining 11 slices of culatello, using up all the filling. Garnish the bundles and serve.
