Step 1
Place a frying pan or skillet on medium heat. Add oil to the pan then arrange the sausages in it.

Pan fry sausages for 5 minutes while turning them intermittently to brown the sides evenly.

Transfer the sausages to a plate, let them rest for 5 minutes, and slice them into bite sizes.

Add onions to the frying pan and cook it for 2 minutes or untill it's translucent then add in minced garlic. Stir and cook for 1 minute.

Add ginger, curry powder, cayenne pepper, Coriander, and salt. Stir for 1 minute or till the spices release their fragrance.

Pour in coconut milk and chicken broth. Stir and simmer for 2 minutes.
Step 7
Add the sausages, peas, and carrots. Stir and let it continue to cook for 5 minutes.
Step 8
Mix cornflour with water to make cornflour slurry and add it into the curry. Stir and simmer the curry for 2-3 minutes or till it's thickened.
Step 9
Take off the heat and serve.
