Easy Sausage Curry

800 g Chipolata Pork Sausages

tbsp Olive Oil

Onion (peeled and finely chopped)

Garlic Cloves (peeled and finely chopped)

tbsp Fresh Ginger (grated)

tbsp Mild Curry Powder

tbsp Plain Flour

500 ml Chicken Stock

150 g Frozen Peas

tbsp Double Cream

tbsp Mango Chutney

Salt and Pepper

Cook your sausages. You can either fry, oven bake or grill them using 1 tbsp of the olive oil. This should take about 10 minutes and you can do this the night before to save time, and keep them in the fridge.

Heat 1 tbsp of olive oil in a shallow casserole and fry the onion, garlic and ginger on a medium heat until the onion softens (about 4-5 minutes).

Stir in the curry powder and flour and give it a good mix.

Pour in the chicken stock and simmer for 5 minutes on a medium heat. The sauce will start to thicken.

Add the frozen peas and cook for a further 5 minutes.

Add the double cream and mango chutney and mix to combine.

Add the cooked sausages to the sauce (I usually cut them in half) and warm through for a few minutes.

Season and serve with rice.

Sear the sausages in the pan you are wanting to cook the curry in, browning them all over. You will need to do this in 2 batches. Remove the browned sausages to a plate and put to one side.

Place the oil in the pan and cook the diced onion over medium meat for 5-7 minutes, until softened. If the sausage meat has stuck to the bottom of the pan and begins to look as though it is burning, carefully add a splash of water (it will splutter) and scrape the bottom of the pan with a spoon, then cook the onion in this - it will cook as the water evaporates.

Add the crushed garlic, grated ginger and curry leaves, if using, and cook for 1-2 minutes.

Add the chilli powder, turmeric, fennel seeds and garam masala, and cook for 30 seconds until fragrant.

Tip in the tomatoes and water, chop the browned sausages into quarters / thirds and add them to the pan.

Bring to a boil, then lower the heat and simmer with the lid on for 20-25 minutes.

Check for seasoning and serve with rice and naan bread.

Heat the pan over medium-high heat, drizzle 1 tbsp of cooking oil. Add the sausages and brown them on both sides. Then remove the sausauges from the pan and set them aside. ( Then cut them into small bite-size pieces before adding back to the curry sauce. )

In the remaining oil, saute the onions with medium heat. Once the onions are soft and translucent, add grated garlic and ginger. Saute for a few seconds until fragrant.

Then add curry powder, tomato paste, chilli powder, crushed chillies, and plain flour. Stir everything well and toast the spices and flour for a few seconds. ( Make sure not to burn the spices. )

Pour the water in and bring it to a boil. Add stock cube, salt, pepper, and sugar. Stir it well until the sauce is smooth and thick. ( Add more water if the sauce is too thick. )

Add carrots and follow with the sausages. Bring it to simmer for 2-3 minutes. Add green peas and continue cook for another 1-2 minutes or until the sauce is thick. Serve while warm with mashed potato or rice.

Pan fry sausages for 5 minutes while turning them intermittently to brown the sides evenly.

Transfer the sausages to a plate, let them rest for 5 minutes, and slice them into bite sizes.

Add onions to the frying pan and cook it for 2 minutes or untill it&#39;s translucent then add in minced garlic. Stir and cook for 1 minute.

Add ginger, curry powder, cayenne pepper, Coriander, and salt. Stir for 1 minute or till the spices release their fragrance.

Pour in coconut milk and chicken broth. Stir and simmer for 2 minutes.

Add the sausages, peas, and carrots. Stir and let it continue to cook for 5 minutes.

Mix cornflour with water to make cornflour slurry and add it into the curry. Stir and simmer the curry for 2-3 minutes or till it&#39;s thickened.

Take off the heat and serve.
