Step 1
Peel and slice the onions, then heat some oil in a frying pan, add the onions and gently fry them until they go dark brown (make sure they don't burn) - it will take at least 20 minutes

Next, slice the ginger, chillies and garlic and add them to the cooked onions, keep stirring over a gentle heat

Add the coriander and cook for a further 5 minutes

If the mixture starts to stick to the pan add a splash of water

Now add the cumin, turmeric and garam masala and stir

Finally, add the finely chopped tomatoes, a couple of cups of water, sugar and salt
Step 7
Leave the mixture to simmer over a low heat for about 15 minutes - done!
Step 8
Now you can either leave the mixture to cool, divide it into portions and freeze, or cook some meat, mix it up and enjoy your delicious curry
