Ditch the takeaway and make restaurant-quality flavourful prawn fried rice at home! Take under 20 minutes to make everything from scratch.

Prawn Fried Rice

200 g Tiger prawns (Or king prawns

Salt

White pepper powder (or black pepper)

tbsp Garlic (Finely chopped)

Onion (Cut small dices

Carrot (cut small dices

Green Peas (Frozen green peas

Spring Onions ((Scallions) Cut thin slices)

tbsp Vegetable oil (Or neutral flavour oil)

tbsp Oyster Sauce

tbsp Light soy sauce (Or regular soy sauce/ all purpose soy sauce)

Sesame oil

¼ tsp

White pepper

First season the prawns with salt, white pepper and Chinese cooking wine and set it aside. Add a pinch of salt in the eggs, whisk and set it aside.

Heat the wok/pan into medium-high heat, add 1 tbsp of oil, stir fry the prawns for few seconds and follow with the chopped garlic. Cook for another 1-2 minutes and push it one side of wok.

Drizzle 1 tsp of oil and add the whisked eggs in. Once the egg is set in the bottom, scramble it into small pieces. Remove the prawns and egg from wok and set it aside.

In the remaining wok, add 1 tbsp of oil add chopped onions and stir for few seconds, then add the carrots and green peas and cook for 2 minutes or until cook through.

Next add the rice and pour the sauce over the rice and fry with high heat for 2-3 minutes or until the sauce dry out. Place the prawns and eggs back in the wok and toss well to combine everything evenly and continue stir fry for another 1 minute.

Turn off the heat and sprinkle the chopped spring onions. Transfer to serving to serving plate and serve immediately.

1kg onions, sliced

ginger (approximately 2cm x 2cm)

green chilli

garlic (4x cloves)

coriander

½ tsp cumin (powdered)

½ tsp turmeric (powdered)

½ tsp garam masala

Peel and slice the onions, then heat some oil in a frying pan, add the onions and gently fry them until they go dark brown  (make sure they don&#39;t burn) - it will take at least 20 minutes

Next, slice the ginger, chillies and garlic and add them to the cooked onions, keep stirring over a gentle heat

Add the coriander and cook for a further 5 minutes

If the mixture starts to stick to the pan add a splash of water

Now add the cumin, turmeric and garam masala and stir

Finally, add the finely chopped tomatoes, a couple of cups of water, sugar and salt

Leave the mixture to simmer over a low heat for about 15 minutes - done!

Now you can either leave the mixture to cool, divide it into portions and freeze, or cook some meat, mix it up and enjoy your delicious curry

Let’s make easy crispy sesame beef with delicious Chinese honey sesame sauce. Tender beef strips with a crispy coating, smothered in sweet, sticky, nutty sesame aroma sauce. 

Crispy Sesame Beef

Beef steak (About 0.66lbs, Cut thin strips)

tbsp Toasted sesame seeds

Egg white

tbsp Cornstarch (For coating)

Garlic

onions

tsp Dried crushed chillies

tsp Soy sauce (Regular soy sauce

tsp Grated ginger

¼ tsp Baking soda

tbsp Soy sauce (Regular soy sauce

Honey

tbsp Rice vinegar (White vinegar or lemon juice)

½ tsp Cornstarch

Water

First cut the steak into thin strips against the grain. Then marinate the beef with regular soy sauce, sesame oil, baking soda, and grated ginger. Mix it well and allow it to marinate for at 15 minutes. 

 Add one egg white into the marinated beef and mix everything well. Add cornstarch and coat each beef piece well. Toss the excess flour before adding to the oil. 

Combine sauce ingredients in a small bowl and set it aside. Prepare garlic and spring onions and set them aside.

Beef Marinade and Coating

Heat the oil over medium high-heat oil. Once the oil is hot add the coated beef pieces and fry for 3-4 minutes or until the coating is crispy and golden. Fry the beef in batches and do not overcrowd the frying oil. Remove from oil and set them aside over a paper towel and cooling rack. 

In a large wok or pan, drizzle oil and saute garlic for a few seconds until fragrant. Next, add crushed chillies and stir fry few more seconds. 

Pour the prepared sauce in, stir it well and allow the sauce to reduce slightly and glossy. 

Then add the fried beef and toss everything well with the sauce. Finish with toasted sesame seeds and spring onions. 

Transfer to a serving plate, garnish with spring onions and sesame seeds. Serve immediately.
