Step 1
Preheat oven to 180C.
Step 2
Cut sheets of shortcrust pastry into half lengthwise and place onto baking trays lined with silicon baking paper.
Step 3
Place spoonfuls of jam at regular intervals about 1cm from upper edge of pastry.
Step 4
Run a wet finger around the jam, then carefully fold pastry over to make an envelope.
Step 5
Press down onto the wet pastry and cut into bars using a blunt knife.
Step 6
Bake for about 12 minutes, or until bars are lightly browned.
Step 7
Cool on racks and store in an airtight container.
