Step 1
Blend or process biscuits until they resemble breadcrumbs. Pour in melted butter until combined and sticking together.
Step 2
Press biscuit mixture evenly over the base of a 20cm x 30cm lamington pan. Refrigerate until required.
Step 3
Sprinkle gelatine over the water, allow to stand for a few minutes then microwave for 30 seconds or until dissolved.
Step 4
Beat cream cheese until smooth. Add condensed milk, lemon juice and cream. Continue to beat until smooth.
Step 5
Stir in gelatine mixture. Pour over the top of biscuit base. Refrigerate until set for at least 2-3 hours.
Step 6
Make jelly according to packet directions. Cool to room temperature before pouring over cream cheese layer.
Step 7
Refrigerate until slice is set completely.
Step 8
Cut into squares to serve.
