Step 1

Line a 20 cm pan with two thicknesses of baking paper.

Step 2

Combine dates and mixed fruit in a saucepan with butter, spice and water. Stir over low heat until butter has melted.

Step 3

Bring to a boil and boil for 3 minutes. Remove from heat and allow to cool completely.

Step 4

Add rum and orange juice to eggs then add to fruit mixture. Mix well. Add sifted dry ingredients and combine thoroughly.

Step 5

Spread evenly into pan and bake for 2 hours at 170C.

Step 6

Cover with foil until cold.
