Step 1
Preheat the oven to 350°F and grease two 6 inch rounds. Set pan aside.
Step 2
In a large bowl, mix the pumpkin, peanut butter, and oil together until well mixed. If you’re using a stand mixer, about 2 minutes. Add the egg and mix well. Add in all the dry ingredients and using a rubber spatula, fold into the wet until well mixed.
Step 3
Divide the batter into two pans and bake for 18 minutes or until a toothpick inserted in the middle comes out clean.
Step 4
In a stand mixer fitted with the whisk attachment, beat the yogurt and peanut butter until light and fluffy, about 3 minutes.
Step 5
Once the cakes have cooled frost them. If you would like a two layer cake, you can leave the two cakes as is. If you would like a 4 layer cake, use a long serrated knife to cut each layer in half. Place one half down on a cake stand or plate and spread a thin layer of “frosting.” Place the next layer on top and repeat until all layers are assembled.
