Step 1

Sift the dry ingredients into a large mixing bowl.

Step 2

Melt the butter, add the remaining wet ingredients and mix until smooth.

Step 3

Add the combined liquids to the dry ingredients and fold together until the flour is dampened, but not smooth.

Step 4

Divide the mixture evenly between 12 medium sized, greased muffin pans.

Step 5

Sprinkle with chocolate chips if desired before baking. Bake at 200C for 12 minutes.
