Step 1

Heat the oil in a large pot over medium heat

Step 2

When the oil is shimmering, add the onion and cook until soft and translucent, about 3 minutes

Add the garlic and cook until fragrant, 30 seconds

Step 4

Add the carrots, celery and pepper and cook until the vegetables have softened, about 5 minutes

Step 5

Add the potatoes, tomatoes, black beans, great Northern beans, chili powder, cumin, paprika, basil, oregano and salt and stir to combine

Add the water and stir

Step 7

Raise the heat to high and bring the mixture to a boil, then lower the heat to medium-low and simmer, covered, until the potatoes have softened and the flavors have combined, about 30 to 35 minutes

Step 8

Serve immediately
