Step 1

Begin by placing the beef chunks into your Instant Pot and pouring 1/4 cup of the giardiniera brine over the beef.

Step 2

Next, mix the beef broth and Italian seasoning dressing packets together in a medium-sized saucepan. Cook on high heat until the broth begins to boil, then turn the heat to low and allow to simmer for 2-3 minutes.

Step 3

Pour the broth mixture over the beef chunks.

Step 4

Set your Instant Pot on high pressure and set the cook time to 60 minutes.

Step 5

When the cook time is done, allow the pressure cooker to perform a natural release for about 15 minutes. (After 15 minutes, you can manually release any remaining pressure.)

Step 6

Shred the beef, saving the broth in your Instant Pot.

Step 7

You can simply top the shredded meat with giardiniera and serve. I like to fill a crusty Italian-style roll with the shredded beef and top it with a slice of provolone cheese and a dollop of mustard. Serve with a side of au jus for dipping.

Step 8

You can easily convert this delicious recipe to make it in your crock pot. I like to use my crockpot to make these delicious sandwiches when we don't have an exact time for dinner and I know people will be eating throughout the day. This simple dish is perfect for game day, a potluck, or a family event.

Step 9

Begin by placing the beef chunks into the bottom of your slow slow cooker and pouring 1/4 cup of the giardiniera brine over the beef.Next, mix the beef broth and dry Italian salad dressing mix together in a medium-sized saucepan. Cook on high heat until the broth begins to boil, then turn the heat to low and allow to simmer for 2-3 minutes.Pour the broth mixture over the beef chunks.Cook on low heat for 10-12 hours or high heat for 4-5 hours.
