Step 1
Prepare the Oven and Pan: Preheat the oven to 325°F. Prepare a 9” x 9” baking pan by cutting the puff pastry sheets to fit.
Step 2
Prepare Nut Filling: In a food processor, pulse the pistachios, cinnamon, and nutmeg until finely ground.
Step 3
Place the first puff pastry sheet in the baking pan and brush with melted butter.
Step 4
Evenly spread half of the pistachio mixture over the buttered pastry layer.
Step 5
Add the second puff pastry sheet, brush with butter, and spread the remaining pistachio mixture on top.
Step 6
Top with the last puff pastry sheet and brush with butter.
Step 7
Cut the Baklava: Using a sharp knife, cut the baklava on the diagonal into 1½" strips to create a diamond pattern.
Step 8
Bake: Bake for 1 hour and 10 minutes or until the top is golden brown.
Step 9
Make Syrup: While the baklava bakes, prepare the syrup. In a medium stockpot over medium heat, combine honey, water, sugar, and lemon juice. Stir and cook for 5-7 minutes until slightly thickened. Set aside.
Step 10
Add Syrup and Cool: Once the baklava is finished baking, pour the syrup evenly over the top. Let it sit to absorb and cool completely (about 1 hour).

Optional Topping: Drizzle with additional honey or melted chocolate if desired. Enjoy!
