Step 1
Peel bananas, cut in half lengthways, and place in a small, buttered casserole dish.
Step 2
Combine sugar, orange juice, sherry and cinnamon, and then pour over bananas.
Step 3
Bake uncovered at 180C for 10-15 minutes, or until bananas are tender. Baste once or twice with liquid.
Step 4
Remove from the oven and sprinkle with extra cinnamon and 1 tablespoon of rum if desired.
Step 5
Serve with ice cream.
