Step 1
Spray your casserole dish with nonstick cooking spray (for easy clean up). :-)
Step 2
Open the pack of El Monterrey Burritos and place them in the casserole dish in one single layer if possible
Step 3
Open the can of chili and spread over the top of all the burritos, trying not to leave any of them uncovered.
Step 4
Grate 1/2 of the block of Colby Cheese and spread half of that over the burritos. Save the other half of your grated cheese to add later.
Step 5
Cover the dish and put in the oven to bake for 45 minutes.
Step 6
After about 30 minutes of cooking, take the casserole out and put the rest of the cheese onto burritos and cook for another 15 minutes.
