Step 1
Prep: Dice the onion and celery stalk, then mince the garlic cloves (if using fresh garlic). Slice the mushrooms as well. Then set all the vegetables aside.
Step 2
Cook: In a large saucepan, over medium heat, melt the butter. Add in the diced onion and celery, sauté until the vegetables are softened. Add in the minced garlic and Italian seasoning, stir to combine well.
Step 3
Add mushrooms, and cook, stirring, until mushrooms are tender.
Step 4
Simmer: Add in the brown rice and chicken broth, stir it all together. Cover the pan, reduce the heat to medium-low, and bring it to a simmer. Continue to simmer until the liquid is absorbed, and rice is cooked through (about 40 minutes.)
Step 5
Once cooked, remove the lid, and stir in parsley. Serve immediately and enjoy!
