This Mushroom rice recipe is a simple &amp; tasty one-pot rice recipe that gets ready in just minutes. It&#39;s full of mushroom flavor and is vegan and gluten-free. You can enjoy mushroom rice as a meal by itself or with a stir-fried dish of your choice.

Mushroom rice

rice (around 165 grams)

button mushrooms (sliced, around 350 grams)

red onion (finely chopped)

garlic (minced)

onion

vegetable bouillon

onion powder

red chili flakes

black peppercorns (adjust to taste)

Salt

olive oil

water (or as required to cook the rice)

Heat oil in a pan. Add onion and saute until it turns translucent.

Add minced garlic and the white part of spring onion. Saute for a few seconds.

Add sliced mushrooms and stir fry on a high flame until the moisture released by mushrooms dries up.

Next, add crumbled vegetable bouillon cubes, chili flakes, onion powder, salt, and pepper. Saute for about a minute.

Add rinsed rice, mix, and saute for 1-2 minutes.

Add water and mix everything. Cover the pot and cook for around 13-15 minutes or until the rice gets cooked.

Once done, switch off the stove. Don&#39;t remove the lid for 5 minutes. After that, remove the lid and fluff the rice using a fork. Add chopped spring onion greens and mix.

Easy Mushroom Rice

TBSP butter

rib celery (diced (about ½ a cup))

Italian seasoning

oz cremini mushrooms (sliced)

brown rice

chicken broth

TBSP parsley (minced)

Prep: Dice the onion and celery stalk, then mince the garlic cloves (if using fresh garlic). Slice the mushrooms as well. Then set all the vegetables aside.

Cook: In a large saucepan, over medium heat, melt the butter. Add in the diced onion and celery, sauté until the vegetables are softened. Add in the minced garlic and Italian seasoning, stir to combine well.

Add mushrooms, and cook, stirring, until mushrooms are tender.

Simmer: Add in the brown rice and chicken broth, stir it all together. Cover the pan, reduce the heat to medium-low, and bring it to a simmer. Continue to simmer until the liquid is absorbed, and rice is cooked through (about 40 minutes.)

Once cooked, remove the lid, and stir in parsley. Serve immediately and enjoy!
